The first morning of Passover is always a Matzo Brei morning. When you can't have bread mornings can be a bit tricky, but this Passover version of French Toast is delicious, healthy and perfect drizzled with some maple syrup and lots of fresh berries.
Serves 4
4 pieces whole wheat matzo
3 extra large eggs
3 tsp honey
2 tsp cinnamon
1.5 tsp vanilla extract
2 tbsp low fat milk
1 tsp butter
Maple Syrup or Cinnamon and Sugar for serving
Take whole pieces of Matzo and run them under warm tap water for about 30 seconds each until the matzo gets slightly soft. Break into small pieces as set a side.
In a large bowl beat eggs, honey, cinnamon, vanilla and milk until frothy. Add pieces of matzo to the bowl. Stir up until everything is coated and let sit for 10 minutes
Heat a medium non-stick skillet to low and add butter. Swirl to coat. Pour in matzo egg mixture and create a single layer.
Cook on low for about 5 minutes or until bottom is golden brown and everything is sticking together. Take a plate and place on top of the pan. Flip the pan upside down to invert the Matzo Brei. Slide it back into the pan so the underside is now on top. Cook for about another 3 minutes until underside is done
Slice into individual portions and drizzle with Maple Syrup or top with Cinnamon and Sugar.
