Summer Fruit Salad


Even though it isn't officially summer, my favorite fruits are starting to make an appearance! And to celebrate, I made a delicious Summer Fruit Salad. It is loaded with beautiful colors, sweet flavors, a punch of acid from the dressing and a pop of freshness from the mint. There are no rules here, chop up whatever fruit looks delicious, make sure to sure this nice and cold so it is extra refreshing, and keep your family, your guests, or even just yourself coming back for second and third helpings!


Serves 4

  • 4 cups fruit cut up into bite size pieces- I chose Watermelon, Strawberries, Nectarine, Apricot and Golden Kiwi

  • Juice of 1/2 lime

  • Juice of 1/2 small orange

  • 1 tbsp fresh mint thinly sliced

  1. Add cut up fruit into a large bowl

  2. Add fresh juice and toss

  3. Top with sliced mint and serve cold
