Citrus Yogurt Cake with Chia

Ch Ch Ch Chia!! Chia Seeds and Greek Yogurt (two of my favorite partners in crime) have gathered together to make one delicious cake. This is a showstopper for brunch or a delicious afternoon treat. The citrus is tart and refreshing and the chia and whole wheat flour make this cake rich and fiber so you get that good for you full fleeing.

Citrus Yogurt Cake with Chia Seeds

Recipe 1/2 cup plain greek yogurt 2 tablespoons chia seeds

2 tablespoons + 1 tsp lemon juice, divided 1 tablespoon orange zest, plus 1/2 teaspoon, divided

1 ½ cups white whole wheat flour 1/4 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon kosher salt

1/4 cup unsweetened apple sauce

1/4 cup canola oil

1/2 cup granulated sugar

1/4 cup honey powder

½ teaspoon vanilla extract

3 large eggs

1/4 cup confectioners sugar

Preheat the oven to 350°F. Grease a 9-by-5-inch loaf pan with canola oil spray and line with parchment paper

Combine the yogurt, chia seeds, 2 tablespoons lemon juice, and 1 tablespoon orange zest in a small bowl and set aside.

In a medium bowl, whisk together the flour, baking soda, baking powder , and salt.

With an electric whisk or mixer beat the oil, apple sauce, sugar and honey powder on high for 3 minutes. Stir in the vanilla extract and then add the eggs in one at a time, beating in between

Gently mix in the dry ingredients with a wooden spoon. Once combined add in the yogurt chia mixture

Pour batter evenly into prepared pan and smooth the top with a spatula. Bake cake in the center of the oven, until a cake tester, comes out clean, and the top has set, about 35 to 40 minutes


Allow cake to cool in the pan for 10 minutes and then gently remove and place on a wire rack


Meanwhile mix powdered sugar, 1 tsp lemon juice and 1/2 teaspoon orange zest. You want the glaze to be slightly runny. If it’s too dry add in a touch more lemon juice.


Once the cake is completely cooled take a small spoon and gently drizzle the glaze over the cake. If it’s starts to melt into the cake you haven’t let it cool enough
