A Healthier Bolognese with Whole Grain Pasta and Vegetables


Veggie Packed Whole Grain Pasta Bolognese is the ultimate comfort food. Swapping out extra fatty meats, cream and processed flours make this dish nutrient packed and a perfect meal for the whole family. This recipe always makes leftover and is great for lunch the next day.

Serves 4

Whole Grain Pasta Bolognese

16 ounces of Whole Wheat Pasta- any short pasta will do

12 ounce jar of organic Tomato Basil sauce

1 cup organic jarred crushed tomatoes

1 lb lean ground beef or ground turkey

2 tbsp olive oil

4 cloves garlic minced

1 bell pepper (red, yellow or orange!) diced

1 small to medium zucchini diced

1 large or 2 medium carrots diced

8 Cremini Mushrooms diced

1/4 cup fresh basil leaves torn

1 tsp sea salt

1 tsp pepper

Pinch of crushed red pepper (optional)

Freshly grated parmigiano cheese (optional but recommended)


Heat a large skillet to medium low and add oil. Once heated add garlic and a pinch of red pepper flakes (if using)

Let garlic get slightly browned, do not burn- about 1 minute

Increase heat slightly and Add carrots and peppers. Cool until soft, mixing often about 5 mins.



Increase heat to medium height and Add ground meat.

You want the meat to brown at this stage. Make sure to break up clumps and push meat down in pan so it sears. Add half the salt and pepper. Cook about 5 minutes

Add zucchini and mushrooms and cook for about 5 minutes longer until veggies look softened. Add remainder of the salt and pepper.


Add both tomato sauces and reduce heat to medium low. Scrape up any brown bits in the pan with a wooden spoon



Let sauce very lightly boil for a few minutes Add torn basil

Reduce heat the a simmer and let sauce remain on the stove for 30-45 minutes


At this stage you can start cooking your pasta (Al dente please!) or you can let sauce cook, cover and refrigerate


If making sauce later just return to the stove and bring back to a simmer. You can cook this for about 15-20mins, just watch to make sure it doesn’t burn


Add cooked pasta directly from the pot to the sauce and gently stir in, trying not to break any of the pasta


Serve immediately with freshly grated parmigiano cheese if desired
