String Beans with Shallots and Lemon


The combination of a green veggie, shallots and a pop of acid is my favorite side dish. My kids love this dish and want to gobble up their veggies! Don't be afraid of flavor here! A boring side is exactly as it sounds, boring. So pack on the flavor and bring on the greens!


Serves 4

12 ounces string beans

1 large shallot peeled and sliced into rings

1 tbsp olive oil

Juice of 1 lemon

1 tsp flaky sea salt

1/2 tsp ground pepper


Heat a large nonstick skilled to low. Add olive oil. Once warmed swirl around pan. Add shallot and sauté 3-5 minutes until shallots are brown and crispy, not burnt. Add string beans, lemon juice, salt and pepper. Increase heat to medium. Cook another 3 minutes until string beans are tender but still bright green.
