Mango Margaritas

You have probably already come to realize that I love a fruit based cocktail. They are so refreshing and seriously go down so easy! And don't you kind of feel healthier if you are having your cocktail and a doze of fresh fruit? I for one do! And these Mango Margaritas are tart, refreshing and a little spicy! They are the perfect accompaniment to a bowl of Chips and Guac or just to sip on a warm Spring day!

Serves 2

  • 5 oz blanco tequila

  • 2 oz fresh mango puree (recipe below)

  • Juice of 1/2 fresh lemon

  • Juice of 1/2 fresh orange or clementine (save the squeezed half!)

  • Tajin seasoning

Mango Puree (makes a large batch)

  • 3 mangoes peeled and cut into large chunks

  • 1 cup water

  • 1 tbsp agave nectar

  • 1 tbsp honey

  1. To make the mango puree add all ingredients to a blender and puree until smooth. This makes a large batch so save some for the cocktails and you can use the rest to make homemade ice pops!

  2. In a cocktail shaker add tequila, mango puree, lemon juice and orange juice. Add lots of ice and shake!

  3. Place about 1 tbsp Tajin seasoning on a plate

  4. Take the squeezed orange rind and rub along the rim of 2 glasses. Take the glasses and dip them into the plate of Tajin so the top and outside of the rim get the seasoning on them

  5. Fill 2 cocktail glasses with ice and strain in the tequila mango mix. Enjoy!!
